I was trying to keep things simple so everyone can make them. Mirin isn't exactly something you can find at your local super market. It took me weeks to find a place that carries it.

Uwah that sounds yummy! I've only been making sweet things lately so a savory egg would be a welcomed change <3 And I think that's called sweating (ps- I don't like that word D:). I watch a lot of Good Eats and learn a bunch of weird cooking terms lol

this is so cool. YOu are so cool (especially for the dorayaki and mochi thing) I usually make this by sauteeing (<-- is that right?) teenie tiny pieces of onion or scallion or carrot or whatever. and when the egg thingie is all setting, (without sugar becuase this is like a savory thingie), i add a piece of nori and roll. uber yum.
